Instructions
  1. Wash the pumpkin well and cut off both ends. Remove the stem.

  2. Scoop out the seeds and peel off the skin with a vegetable peeler.

  3. Slice thinly and evenly—careful, it can get slippery!

  4. Mix the pancake mix, salt, and cold water. Stir just until combined—don’t overmix to keep the texture light and crisp.

  5. Heat a 24 cm pan with a generous amount of oil. Pour in half of the batter to make one large pancake (makes about two). You can also spoon small rounds for bite-sized ones.

  6. When the edges start sizzling and the surface looks slightly set, flip carefully.

  7. Press lightly and cook until both sides turn golden and crisp.

  8. Serve immediately—this dish tastes best hot and fresh.

  • As it cools, moisture from the pumpkin softens the texture, so eat right away for full crispness.
